I am wanting to move the display from an Orion DEQ-30, from the unit into my dash. I have a few questions: I was just planning on using ribbon cables, the 7-seg Leds will be about 12 wire ft away from the main unit, I was going to remove the LEDs from the unit solder in ribbon cable and attach leds to other end, will I run into any problems doing this?
Also do you think there would be a problem putting a transitor on the ground side of the led to turn the display on and off? The unit should still work even if the display is not connected right?

First: A long length of ribbon cable has a great deal of resistance compared to a point to point solder joint. If the driving circuits of the LCD aren't made to consider the voltage drop across a long length of cable, this won't work at all.
Secondly: If you mean a switch, then technically I don't see why it SHOULDN'T work with the display off, but that 100% doesn't mean that it WILL.
Your absolute best bet, and very important might I add, is to get on the phone with orion or a/d/s, inform them that you are interested in an interesting install idea, and you need the advise of a DEQ engineer. That is a pretty complicated little box.

well right after I posted this I got a response back from a/d/s and they said no problem, so all I need to do now is find some sort of connector for the ribbon cable. So the display is detachable
