Here's the deal- you should go for the center of the dash, mainly cause trying to get an image directly in front of you for both driver and passenger while still having good stage width will prove impossible.

Sometimes a center image in a deep stage will appear to be side biased, when in reality, it is really in the center- play the 7 drum beats to line everything up, and it will fall into place from there.

You have the right to say "screw the passenger" if the car is just your daily driver. If you intend to compete, you need to go for a setup that centers in the center of the dash and where the image starts at the top of the dash and goes up to the roof.
Regarding width, it should go at least from pillar to pillar. and there needs to be depth in the sound as well as image specificity...or the ability to identify the location of instruments within the soundstage.
