I am planning on building some kickpanels for my car and for the outside, I was going to cover them with vinyl. What's the best way to do this? They aren't going to have a lot of grooves or contours, but how do you conform the vinyl to the shape of the kickpanel?

Heat the vinyl with a heat gun if you have one, if not, use a blow dryer. Once the vinyl is heated it becomes more flexible, and stretches better. Stretch the heated vinyl over the edges of your kick panels and staple the material to the back side of the panels, just be sure to round or chamfer the edges of the panel, this also helps the vinyl make the atretch around the panel edge. If the panels have ridges or a convex contour, you'll need to apply some spray adhesive to adhere the vinyl into the depressions in the panel.

GOOD advice once again mabeita.
just be carefull not to heat to much or get to close with your heating source you will melt the vinyl.
