What class Would I be in if I have 2 stroker 18's and a us800 and 8 batteries?

Assuming your vehicle is not modified in front of the trailing edge of the door jambs and all of your batteries are behind this plane, you would be in the Super Street 1-2 Woofer class.

Otherwise, you would be in Extreme 1-2.
