What size of cap should I go with for a
PG XS2500, XS2300, and two infinity kappa 102a amps? It would be around 180 amps and about a 1000 watts. Would a 1 farad or multiple .5 farads be better?
also which is better the 16v or 20v caps?
one other thing would 0guage be better than 2guage for this set up about 15-18ft run?

Bigger power wire = ALWAYS better, more expensive.

The more capacitance the better... Although talk to Richard Clark first before buying one of those 15 farad caps :-D (don't let me open up a can of worms on this one ) 1 Farad caps are usually considered moderately standard, and cost less than 2 .5 farad caps and require less wire, which means less resistance.
