What would be the difference in sound having them in a sealed small box compared to and open back freeair/ib setup.
I see people using multiple sets in doors as well as in sealed mdf boxes and I can't tell the sound difference. Is one way louder that the other?

I also can't find a good way to wire them up. Seems like I can't have more than two sets per amp. How are people running 20+ sets of midrange?

In the small sealed boxes they will have alot more "punch", won't play as low and will take alot more power than IB.

IB in a door they will play lower and the mids will be louder with less power but will distort sooner.

I had a pair of Focal 6x9's in small sealed boxes running off a bridged 120watt PPi Amp I got tired of kicking the boxes around so I got some dynamat and threw them in my doors. I must say I like the much more in the doors, the mid range in much wider before where I could tell by playing with my X-over I had clean low end from only the 6x9's down to 63hz, now they play down to aroun 40ish. I had them crossed over at 80hz (Q=3) in the sealed boxes now they are crossed over at 63 (Q=1) but I can't play them quite as loud overall.

Wire them in pairs of two, how may do you want to use?? with say 4 pair wire two down to 2ohms then take thoes two back up to 4 do the same with the other way? of vice-vresa if you the each pair of two up to 8ohms the then down to 4ohms.

No can do. Coaxials have passive components for tweets. If you do any type of series wiring the woofer will be affected by the crossover.
