I want to run two amps in my car which total out to about 1600 watts. They also total 60 amp fuse + 40 amp fuse = 100 amp fuse but my alternator is 80 amps. I have a red top optima. Everything is stock. Is this possible? If is is, is there a 100 amp fuse?

Your actual current draw is probably about 50-65% of your fuse ratings. So if you fuses add up to 100 amps, you're probably drawing about 60 amps of current. Your peak draw could actually be more than the fuse ratings (by like 10%), but in the split-second it draws 110 amps, it's not going to blow the fuse.
