I know that ideally in sound quality judging, your frequency response should be flat, but what do people consider the best frequency response for their ears? Should there be a dip of a few dB at certain frequencies and a boost at others? What do you think?

What I would do, if I were you, would be to go to the store where you bought your stuff from, or a store that you know someone who works there, anyway, you want to listen to they're HOME gear. You want to listen to ever possible combination of amp/speaker until you find a combo that YOU think sounds PERFECT! Then, play pink noise over THAT sysstem, and get the RTA curve, then RTA your car to that same curve. You should like the way that sounds. I dont believe there is a "standard" RTA curve any more. I used to think that a curve that started high on the low end and ended low on the high end sounded good, but then I had another listen, and now I like it to just sound good, and I could care less what the curve looks like.
