My mids and highs amp (crossfire 404s) that pulls 30amps of current shuts down due to lack of power whenever i am high volume at idle and the bass hits. but the sub amp (memphis 100hc) that pulls 80amps of current doesn't, it keeps going... shouldn't it be the otherway around?

Think a Cap would keep my mids and highs on?

I have a 160 amp alt, should i go through the trouble and return it and try to find a more powerful one?

Sounds like you high end amp has a higher low-voltage cut off than the bass amp. I would add a cap.
Incidentally, you probably LOST current at idle with the hi-amp alt...
