I think what you do is get 3 speaker wires. Not positives connected to a negative, but 3 single wires as if you had 3 remote wires. Run a wire from the negative of one sub to the positive of the other sub. Then run the positive of the first sub to the positive of the amp and the negative of the second sub to the negative of the amp. Make sure the wires are connected to the amp in bridged mode.

If I am wrong, someone correct me. I tried!

That sounds like up to 8 then 8ohm bridged,if you had two dual 4's and went up to 8 each then bridged back down it would be 4ohm mono.

choices are..

run the subs 4 ohm stereo (wont be getting 500w)
run the subs 2 ohm mono (could damage amp)
run the subs 8 ohm mono (wont be getting 500w)
run one sub 4 ohm mono (probably overpowering 1 sub and you won't be using other)
buy a Veritas Accumatch (probably cost as much as new amp)
buy a new amp or subs (best solution)

Just to add to t03sq,

This is asuming your amp produces 500Wrms @ 4Ohms:

1)subs in series, for 8 Ohms, your amp will produce 333Wrms. Most SPL.

2)Just one sub, 4 Ohms, amp produces 500Wrms.

3)subs in parallel, 2 Ohms, amp will produce 500-750Wrms. Ustable, Not recomended.

(3) 4-Ohm subs: 1.33Ohm parallel, or 12 Ohms series.

(4) 4-Ohm subs: 1,4, or 16 Ohms
